Ingredients
- 1 ¾ cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 1 ½ tsp baking soda
- 1 ½ tsp baking powder
- ½ tsp salt
- 2 large eggs
- 1 cup buttermilk
- ½ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 cup unsalted butter, softened
- 4 cups powdered sugar
- 3–4 tbsp heavy cream
- 1 tsp vanilla extract
- Pink food coloring
- Green food coloring
Instructions
- Preheat oven to 350°F (175°C) and prepare two 8-inch round cake pans with parchment paper.
- In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, beat eggs, buttermilk, oil, and vanilla extract until smooth.
- Gradually mix wet ingredients into dry ingredients. Add boiling water and mix until combined.
- Pour batter into pans and bake for 30-35 minutes, or until a toothpick comes out clean.
- Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For frosting, beat butter until creamy, then add powdered sugar, heavy cream, and vanilla.
- Separate a portion for green icing and add food coloring to both frostings.
- Frost the cake with pink buttercream and pipe “Happee Birthdae Harry” with green icing.
Notes
- For a vegan option, substitute eggs with flax eggs and use plant-based milk.
- Gluten-free flour can be used for a gluten-free version.
- Decorate with fondant Golden Snitches or house crests for added magic.
