Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • 1 cup buttermilk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 34 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pink food coloring
  • Green food coloring

Instructions

  • Preheat oven to 350°F (175°C) and prepare two 8-inch round cake pans with parchment paper.
  • In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  • In another bowl, beat eggs, buttermilk, oil, and vanilla extract until smooth.
  • Gradually mix wet ingredients into dry ingredients. Add boiling water and mix until combined.
  • Pour batter into pans and bake for 30-35 minutes, or until a toothpick comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • For frosting, beat butter until creamy, then add powdered sugar, heavy cream, and vanilla.
  • Separate a portion for green icing and add food coloring to both frostings.
  • Frost the cake with pink buttercream and pipe “Happee Birthdae Harry” with green icing.
