A quick and versatile cottage cheese flatbread that’s high in protein and low in carbs. Perfect for a healthy breakfast, snack, or light meal.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder (optional)
  • Optional: 1-2 tbsp Parmesan cheese, herbs (rosemary, basil), or spices (smoked paprika)

Instructions

  • In a blender or food processor, combine cottage cheese, eggs, salt, pepper, and optional garlic powder or seasonings. Blend until smooth.
  • Preheat a non-stick skillet over medium heat or line a baking sheet with parchment paper for oven baking.
  • For stovetop: Pour 1/4 cup of batter into the skillet, spreading it evenly. Cook 2-3 minutes per side until golden brown. Repeat with remaining batter.
  • For oven: Spread the batter onto a baking sheet into a 1/4-inch thick layer. Bake at 375°F (190°C) for 15-20 minutes, until firm and golden.
  • Serve warm with your choice of toppings, or store leftovers as directed.

Notes

For a crispier texture, increase cooking time slightly on the stovetop or finish under the broiler for a minute. To freeze, layer with parchment and place in a freezer-safe container.
