## Better-Than-Grandma Tips
Here are a few of my tried-and-true tips to make your Pumpkin Patch Brownie Bites extra special:
* **Whisking Power:** Whisking the eggs and sugar vigorously creates a shiny, crackled top on your brownies—don’t skip this step!
* **Don’t Overmix:** Overmixing the brownie batter can lead to tough brownies. Mix just until the ingredients are combined.
* **Cooling is Key:** Make sure the brownie bites are completely cool before adding the ganache, or it might melt. If you are looking for other desserts, try our amazing chocolate chip cookies.
* **Candy Choice:** Feel free to get creative with your candy toppings! Candy corn, spooky sprinkles, or even a drizzle of white chocolate would be delicious additions.

Ingredients

  • 1 cup (2 sticks) unsalted butter, melted
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 6 ounces baker’s chocolate, chopped
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 12 ounces semi-sweet chocolate chips, for ganache
  • 1 cup heavy cream, for ganache
  • ½ cup Oreo crumbs
  • 24 mini pumpkin candies

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin pan with cooking spray or oil.
  2. Chop the baker’s chocolate and melt it in the microwave in 15-second increments, stirring until smooth. Set aside.
  3. In a large bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, and whisk vigorously for about 3 minutes until light and airy.
  4. Pour in the melted chocolate and whisk until combined. Sift in the flour, cocoa powder, and salt. Gently fold the dry ingredients into the wet ingredients using a rubber spatula, just until combined. Be careful not to overmix.
  5. Fold in the chocolate chips.
  6. Scoop 1.5 tablespoons of batter into each muffin tin. I like to use a small cookie scoop for even distribution. Tap the pan gently on the counter a few times to level out the batter.
  7. Bake for 11-13 minutes, or until the tops are shiny and set. Do not overbake.
  8. Let the brownie bites cool completely in the pan before gently running a knife around the edges and removing them. Set aside to finish cooling.
  9. Place the chocolate chips in a medium microwave-safe bowl. In a separate microwave-safe bowl, heat the heavy cream until it is just about to boil (about 45 seconds).
  10. Pour the hot cream over the chocolate chips and let it sit for a minute. Gently mix the chocolate and cream together until smooth. If there are still chunks of chocolate, microwave for a few more seconds and stir again.
  11. Spoon the ganache evenly over the cooled brownie bites. Sprinkle with Oreo crumbs and top each with a mini pumpkin candy, gently pressing it into the ganache.
